Raised by strong, independent women and shaped by the flavours of his childhood, Chef Jai built his culinary point of view from family kitchens, travel, and some of Toronto’s most respected food spaces.

His approach

Chef Jai combines Jamaican heritage with the cultural mosaic of Toronto, taking familiar ingredients and pushing them toward something more layered, more thoughtful, and more alive. His food is rooted in comfort, but never lazy.

His philosophy

In a world full of fast, forgettable food, he believes in slowing down. When ingredients have time to marinate, smoke, roast, or infuse, they absorb more than seasoning. They absorb character. That patience is where the deeper flavour lives.
